Southwest Potato Salad

Super simple potato salad with incredible flavors that will be a huge hit!

Ingredients
  

  • 1 1/2 pounds red skin potatoes
  • 2 cans 15.25 oz corn with peppers
  • 1/2 cup buttermilk
  • 1/2 cup sour cream
  • 1 lime
  • 1 jalapeno pepper, seeded & minced
  • 1 Tbsp fresh cilantro, minced
  • 1 1/2 tsp garlic salt
  • 1 tsp ground cumin

Instructions
 

  • Place potatoes in a pot with water and bring to a boil. Cook until potatoes are tender, 15-20 minutes. Drain and cool. Cut up into fourths.
  • In a small bowl, whisk buttermilk, sour cream, and lime juice until blended.
  • Dice up jalapeno by removing seeds and ribs. Mince and stir into bowl.
  • Add cilantro and seasonings
  • Add potatoes to mixture, stirring all things together carefully
  • Refrigerate and flavors will enhance and potato salad will thicken
