Southwest Potato Salad

Super simple potato salad with incredible flavors that will be a huge hit!

Ingredients
  

  • 1 1/2 pounds red skin potatoes
  • 2 cans 15.25 oz corn with peppers
  • 1/2 cup buttermilk
  • 1/2 cup sour cream
  • 1 lime
  • 1 jalapeno pepper, seeded & minced
  • 1 Tbsp fresh cilantro, minced
  • 1 1/2 tsp garlic salt
  • 1 tsp ground cumin

Method
 

  1. Place potatoes in a pot with water and bring to a boil. Cook until potatoes are tender, 15-20 minutes. Drain and cool. Cut up into fourths.
  2. In a small bowl, whisk buttermilk, sour cream, and lime juice until blended.
  3. Dice up jalapeno by removing seeds and ribs. Mince and stir into bowl.
  4. Add cilantro and seasonings
  5. Add potatoes to mixture, stirring all things together carefully
  6. Refrigerate and flavors will enhance and potato salad will thicken
